With the big game around the corner, there is a lot of excitement in Seattle. Nearly everyone is wearing their blue and green and “12” flags can be seen on most buildings. It is fun to see the city come together like this.
Our family is getting ready to watch the game at home. The pillows on the couch are fluffed, the fridge is stocked with beverages, and we bought several types of snacks and appetizers. My wife usually makes brownies with SNICKERS® baked into them (which is even better when topped with vanilla ice cream). This year, I decided to try my hand at making my own SNICKERS concoction and came up with…drum roll please…SNICKERS cheesecake bars. Behold the glory.
It is easy to make these ridiculously good treats. You just have to be patient while each layer cools in the freezer. I owe a hat tip to Real Housemoms for this decadent recipe. So let’s get started. Grab an 11 x 17 inch baking dish and line that bad boy with some parchment paper.
I found all of the ingredients for our big game party at our local Walmart neighborhood market. Most people in Seattle want Skittles® in addition to SNICKERS and you can find both in the candy aisle.
For the first layer: Use a double boiler to melt the chocolate chips and peanut butter. You just need to stir it occasionally until smooth and then pout the chocolaty goodness into the baking dish. Pop it into the freezer to harden. See, that wasn’t so bad.
Ready for the second layer? Combine the fluff, peanut butter and confectioners sugar in a mixing bowl and stir until combined. I recommend doing this yourself instead of letting your children help. That powdered sugar can get everywhere fast.
Put the cream cheese in a stand mixer and whisk on medium speed until it is smooth and fluffy. Then you can just add the ingredients from the other bowl into the mixer and whisk until combined. You’ll pour this over the chocolate layer you placed in the freezer earlier. After you press the peanuts into the mixture slightly, put the whole thing back into the freezer to harden for 5 to 10 minutes.
We’re on to round three, the caramel layer: Use a double boiler to melt the caramels in the cream. Simmer over hot water until caramel is smooth. Allow to cool slightly. Now pour the cooled caramel over the filling mixture and peanuts. Pop back in the freezer for about 5 to 10 minutes.
We’re at the finish line. It is time for the fourth layer: Use a double boiler to melt the chocolate chips and peanut butter. Stir occasionally until smooth. Pour into the baking dish. Pop this in the freezer for about 5 to 10 minutes to harden.
At long last, your SNICKERS treats are ready to be cut into squares. Use a sharp knife and try to cut them straight from the freezer to minimize the mess. Who am I kidding, they are still going to make a mess. A gooey delicious mess, that is.
- 1st Layer:
- 1½ cups semisweet chocolate chips
- 4 tablespoons creamy peanut butter
- 2nd Layer:
- 7½ ounces marshmallow fluff
- ¼ cup creamy peanut butter
- 1½ cups confectioners sugar
- 8 ounces of cream cheese
- 1 cup dry roasted unsalted peanuts
- 3rd Layer:
- 11 ounces caramels
- ¼ cup heavy cream
- 4th Layer:
- 1½ cups semisweet chocolate chips
- 4 tablespoons creamy peanut butter
- Line a 11 x 17 inch baking dish with parchment paper. Set aside.

- Use a double boiler to melt the chocolate chips and peanut butter. Stir occasionally until smooth. Pour into the baking dish. Pop this in the freezer for about 5 to 10 minutes to harden.
- nd Layer:
- Combine the fluff, peanut butter and confectioners sugar in a mixing bowl, stir until combined.

- Cut into squares with a sharp knife. This recipe is a bit messy. Just roll with it. It’s totally worth it.
- Serve with a big old SNICKERS loving smile!
